Sausage-meat and sage quinoa stuffing

Seasons greetings one and all!

Christmas is by far my favourite holiday and I have always loved its festive food traditions. However, it can sometimes be a difficult time when you have food allergies or intolerances.

That’s why I’ve been slaving away this evening like a mad scientist to create a Christmas dinner stuffing recipe that follows the low-FODMAP diet!


It was a bit of an experiment but it turned out marvellously (the photo doesn’t do it justice!) so here it is..

– 4 sausages, meat removed
– 1 cup quinoa
– 2 cups vegetable stock (Marigold Bouillon Powder is best)
– 2 tablespoons dried sage
– 2 sticks celery, diced
– one handful dried cranberries

1. Bring stock to boil. Add quinoa. Simmer 10 minutes til absorbed.
